Ingredients

  • 1 cup buckwheat flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1 tbsp poppyseeds
  • 3/4 cup whole milk plain kefir
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 tsp grated lemon zest
  • 2 tbsp fresh lemon juice
  • 1 tbsp avocado oil
  • 2 tbsp honey or maple syrup

Instructions

  1. Preheat your waffle iron.
  2. Combine the first 6 dry ingredients in a bowl and whisk to blend well.
  3. Combine the remaining wet ingredients in another bowl and whisk to blend.
  4. Pour the wet ingredients into the dry ingredients and stir to combine. Do not overwork the dough.
  5. Portion the dough into the waffle maker and cook until done.

Notes

  • Leftover waffles can be individually wrapped and stored in the freezer. Reheat in the toaster or oven.
