Ingredients
- 2 tbsp yogurt
- 2 tbsp mayonnaise
- 1 tsp fresh lemon juice
- 2 tsp chopped fresh parsley
- salt and pepper to taste
- 1- 1/2 cups cooked turkey meat
- 1/2 crisp apple, cored and chopped
- 2 tbsp small diced celery
- 2 tbsp finely chopped walnuts
- 2 tbsp finely chopped sundried cranberries
Instructions
- In a medium bowl, whisk together the yogurt, mayonnaise, lemon juice, salt, pepper, and chopped parsley until combined.
- Add the remaining ingredients and gently toss until they are coated completely.
- If not eating immediately, refrigerate until serving.
- Serve in lettuce cups or as a sandwich with a hearty sourdough bread.
Notes
Feel free to substitute raisins, currants, or your favorite dried fruit for the sundried cranberries.
