Ingredients

  • 2 tbsp yogurt
  • 2 tbsp mayonnaise
  • 1 tsp fresh lemon juice
  • 2 tsp chopped fresh parsley
  • salt and pepper to taste
  • 1- 1/2 cups cooked turkey meat
  • 1/2 crisp apple, cored and chopped
  • 2 tbsp small diced celery
  • 2 tbsp finely chopped walnuts
  • 2 tbsp finely chopped sundried cranberries

Instructions

  1. In a medium bowl, whisk together the yogurt, mayonnaise, lemon juice, salt, pepper, and chopped parsley until combined.
  2. Add the remaining ingredients and gently toss until they are coated completely.
  3. If not eating immediately, refrigerate until serving.
  4. Serve in lettuce cups or as a sandwich with a hearty sourdough bread.

Notes

Feel free to substitute raisins, currants, or your favorite dried fruit for the sundried cranberries.
