Sesame Brittle
Ingredients
- 3/4 cup sugar
- 1/4 cup honey
- 1 tbsp water
- 1 cup raw sesame seeds
- 2 tsp butter
- 1 tsp vanilla
Instructions
- Line a 9" x 13" baking dish (or 1/2 sheet pan) with a sheet of parchment paper or a silpat baking mat. Set aside.
- Place sugar, honey, and water in an 8” nonstick skillet. Heat over low heat until melted and starting to gently bubble. Stir continuously with a spatula and cook for 5 minutes.
- Add the sesame seeds and stir to combine. Increase the heat and bring back to a simmer. You want it to be just bubbling, not a full boil.
- Stirring frequently, cook for 7-9 minutes until the brittle has a dark golden color.
- Remove from heat and stir in butter and vanilla. Pour into a thin layer into the silpat mat or parchment paper. Use the spatula to spread the brittle into an even layer. Try not to get the brittle on the dish.
- Cool at room temperature and break into pieces.
- Store in an airtight container between layers of wax paper.
Notes
- You can use a candy thermometer to determine when to stop cooking the brittle. Cook until it reaches 290 - 300 degrees F.
