Chocolate Kefir Ice Cream
Ingredients
- 2 ripe avocado (about 8 oz flesh only)
- 1/2 cup cacao powder
- 1 1/4 cup heavy cream
- 1 cup whole milk plain kefir
- 1/2 cup maple syrup
- 1 tbsp raw cacao nibs (optional)
- 2 tsp vanilla extract
- pinch salt
Instructions
- Put all the ingredients in a blender and blend until smooth.
- Freeze in an ice cream maker according to manufacturer's directions.
- If you don't have an ice cream maker, pour the ice cream into a shallow pan and place in the freezer. Every 15 minutes or so scrape the sides and stir the ice cream until it is firm. You're breaking up the crystals so it has a smooth consistency.
- Store, covered, in the freezer.
- You'll need to let it rest on the counter for 15 - 20 minutes to soften after removing from the freezer because it will get very hard.
