Roasted Garlic Confit

Roasted garlic confit is an easy way to create a delicious, mellow garlic that is soft enough to spread with a butter knife. This is similar in concept to baking whole heads of garlic in the oven. The bonus to this method is the roasted garlic oil that you end up with.

Confit is a French cooking method where food is slowly cooked in fat, typically at low temperature, until it becomes tender and flavorful. The word “confit” comes from the French verb confire, which means “to preserve”, and originally referred to preserving food in fat. While confit can apply to various types of food, it is most commonly associated with meats like duck, goose, and pork.

In this recipe we are cooking whole garlic clove in oil with fresh herbs in a low temperature oven for a few hours to get a tender, soft cloves with a mellow, sweet flavor. The process is similar to the traditional meat confit, but instead of animal fat, we’re using extra virgin olive oil as the cooking medium.

After cooking, the confited cloves are stored in the refrigerator to be used to flavor foods.

Ingredients

  • 2 heads fresh garlic
  • extra virgin olive oil
  • fresh herbs of choice

Instructions

  1. Preheat the oven to 200 degrees F.
  2. Peel the garlic cloves and place in an oven proof dish large enough to snugly fit the cloves.
  3. Add a few sprigs of your herb of choice.
  4. Cover the cloves and herbs with the extra virgin olive oil
  5. Bake for 1-1/2 to 2 hours until the cloves are tender and lightly browned.
  6. Cool and store in a jar in the refrigerator.

Notes

  • The garlic confit will last up to 2 weeks in the refrigerator and a few months in the freezer.
  • Do not store at room temperature as garlic in oil can grow pathogenic bacteria that can make you sick.
  • When your ready to use the stored confit, use a spoon to scoop it out.

How to use roasted garlic confit.


  • As a spread: the softened cloves can be spread on bread, toast, or crackers.

  • In cooking: the confit garlic can be mashed into dishes like mashed potatoes, pastas, or sauces where it adds a mild, sweet garlic flavor without the sharpness of raw garlic.

  • As a condiment: the garlic-infused oil can be drizzled over vegetables, meats, or used in sauces and salad dressing.
