Here’s a sad statistic for you: research from Strava reveals that the second Friday of January—dubbed "Quitter’s Day"—is when most resolutions come to a grinding halt.

Why is that? Why do we abandon our well-intentioned goals so quickly?

White Chocolate Peppermint Matcha Latte

Ingredients

  • 1 1/2 tsp matcha tea
  • 1 1/2 tsp finely chopped cacao butter
  • 1 tbsp sugar
  • 1 tsp pure vanilla extract
  • 1/3 cup double strength peppermint tea
  • 1 cup whole milk
  • 1 scoop collagen powder (optional)

Instructions

  1. Place the matcha tea, cacao butter, sugar, and vanilla extract (and collagen powder if using) in a preheated one cup measuring cut that has a spout.
  2. Bring the peppermint tea to a boil and pour into the measuring cup. Stir to dissolve. Set aside.
  3. Foam the milk by heating it on the stove top or in the microwave until it is about 150 degrees F. Do not boil. Pour the milk into a large preheated mug.
  4. Using a handheld frothing wand, beat the milk until it has tripled in volume. Alternatively, use the steamer wand on an espresso machine.
  5. Using a circular motion, pour the matcha tea blend into the foamed milk.
  6. Enjoy!

Notes

  • Adjust the amount of matcha tea to suit your preference. I like a strong matcha flavor, you may prefer less. If you're not sure, start with 1 tsp and add more as needed.
  • If you don't have cacao butter, you can substitute 2 tbsp white chocolate chips for the cacao butter, sugar, and vanilla extract. The calorie count is comparable. I don't use the chips because they have a lot of ingredients I prefer not to eat.
  • You can replace the sugar with your favorite sweetener. I often use stevia powder.
